For the youngest kids, who are not ready for potentially scary or complex moral stories, I liked The Mouse and The Buddha, Kathryn Price. Very simple with beautiful illustrations. Gives a sense of peace and joy, in a context that 0-5 year olds can relate to (a mouse eating treats and helping others).
